Paul Hollywood Reveals Three Golden Rules for Perfect Scones

Home bakers looking to elevate their afternoon tea can now rely on the expert guidance of professional baker and The Great British Bake Off judge Paul Hollywood. In a social media video shared ahead of the show’s season launch, Hollywood outlined three foundational rules designed to prevent common mistakes and deliver golden, well-risen scones every single time.

With approximately 30 years of professional baking experience, the celebrated “King of Bread” shared specific techniques addressing dough preparation, wash application, and baking duration. By following these precise instructions, home cooks can easily avoid the dense, dry textures that frequently ruin homemade pastry attempts.

1. The Strict 15-Minute Baking Rule

According to Hollywood, timing is everything during the oven phase. He insists that keeping scones in the oven for a maximum of 15 minutes is vital to preserving their moisture and delicate texture.

“Use the 15-minute scone in an oven as a good rule. And 15 minutes bang on is 99% of the time going to be spot on,” Hollywood explained in his tutorial.

Overbaking delicate pastries quickly causes them to dry out and lose flavor. When baked correctly for 15 minutes, a scone emerges with a crisp outer shell and a moist, never wet, interior.

2. Eliminate Large Lumps of Butter

Another major pitfall for home bakers is the improper incorporation of fat. Hollywood warns that leaving large chunks of butter in the mixture spells disaster during the baking process.

“Lumps are bad in a scone because you don’t want a big lump of butter in there, you will end up with butter just pouring all over your tray, which is what you don’t want,” he noted. To prevent this, bakers should thoroughly rub cold butter into the flour until the mixture resembles fine breadcrumbs with tiny, evenly distributed flecks of fat.

3. Apply Egg Wash to the Top Only

The final technique focuses on the finishing touch before the tray goes into the oven. How you brush your egg wash plays a massive structural role in how high the pastry can climb.

“Now, egg wash the top, try not to egg wash the sides, if it goes down the sides too much it creates a glue and prevents it from rising up,” Hollywood cautioned.

Paul Hollywood’s Complete Scone Recipe

To put these three rules into practice, Hollywood utilizes a straightforward ingredient list designed to yield roughly 12 perfect bakes:

  • 500g strong white bread flour
  • 50g unsalted butter
  • 80g caster sugar
  • 5 tsp baking powder
  • 2 medium eggs
  • 250ml whole milk

To prepare the recipe, preheat your oven to 220°C (gas mark 7). Combine the flour and cold butter, rubbing them together until they resemble breadcrumbs. Stir in the sugar and baking powder. Lightly beat the eggs, add them to the dry ingredients along with the milk, and mix gently until a soft dough forms. Turn the dough out onto a floured surface, fold it over, flatten it slightly, and use a floured cutter to shape your scones before applying the top-only egg wash and baking for precisely 15 minutes.
